Pork / Cook pork roast recipe
Pork roast reminds us of holidays and special family dinners.
A delicious cut of pork that can be the centerpiece for a meal
everyone will remember. Below are 2 recipes that aim to please.
Gingered Pork Roast
Center cut boneless pork loin - 5 pounds
2 Tablespoon fresh crushed and minced ginger root
2 Tablespoons extra virgin olive oil
2 Teaspoons ground ginger
2 Teaspoons sea salt
Honey
With a paring knife form pockets on top of roast. Push fresh
grated ginger into pockets you just made.
In a bowl, mix together extra virgin olive oil, ground ginger
and salt. Place pork in shallow roasting pan and brush with olive
oil mixture. Bake at 350 degrees for 2 1/4 hours on a BBQ
grill.
Brush entire roast with honey and continue barbecuing for 15
more minutes or until internal temperature is 160 degrees F.
Let pork roast to stand 15 minutes before slicing to allow temperature
and moisture to evenly distribute.
Cranberry Glazed Pork Roast
• Boneless pork roast, about 4 pounds, tied
• 2 large cloves garlic, slightly crushed and halved
• Salt and pepper to taste
• 16 ounces whole cranberry sauce or *home-made.
• 1/4 Cup Onion, chopped
• 3/4 Cup orange juice
• 1/4 Teaspoon ground cinnamon
• 1/4 Teaspoon ground ginger
Preheat oven to 325 degrees F.
Rub roast all over with slightly crushed and halved garlic and
salt and pepper; discard garlic pieces when finished
Put pork roast baking or roasting pan and bake 2 1/2 to 3 hours
or until the internal temperature is 160 degrees F.
While pork roast is roasting, combine cranberry sauce,onion,
orange juice, cinnamon and ginger and bring to a boil. Remove
from heat. After the pork roast has cooked for 1 1/2 hours baste
every 15 minutes until done. Let stand for 8 minutes to allow
temperature and moisture to evenly distribute. Serve sliced thin
with remaining cranberry sauce.
Cranberry Sauce
Making cranberry sauce is easy and much more flavorful than canned
cranberries.
• 1 pound fresh cranberries
• 1 cup sugar
• 1 cup of water
Place cranberries, sugar and water in a sauce pan and simmer
until cranberries bust open and it thickens into a jelly like
consistency. Let cool and use with this recipe, on a turkey sandwich,
crackers or for what ever you like.
