Vegetables / Knox's Yummy Stuffed Portabella Mushrooms Recipe
Our Yummy Chicken seasoning is overlooked many times as a way to season other foods, such as mushrooms, but we have been playing with a recipe that is an excellent way to prepare stuffed mushrooms with great flavor everybody will love. We spiced them up a bit with seasonal hot peppers but this recipe is every bit as good without them.
Yummy Chicken

• 3 Portabella Mushrooms
• 1/2 Onion, diced
• 1/4 Red Bell Pepper, diced
• 2 Cloves Garlic, minced
• 1 Tbsp Yummy Chicken dry rub
• 1 Habanero pepper, de seeded and minced (optional)
• 1 Red jalapeno, de seeded and diced (optional)
• About 1/2 cup Bread Crumbs
• Pinch of Salt
• Butter
• Grated Parmesan Cheese
De-stem the 2 nicest mushrooms, save the stems. Turn caps gill side up and set aside. Dice 3rd mushroom and saved stems.
Saute onion, bell pepper, diced mushroom, garlic, habanero and jalapeno until soft. Add breadcrumbs & Yummy Chicken seasoning and heat through, add more butter if necessary.
Remove from heat and spoon into mushroom caps and top with liberal amounts of grated cheese. Bake at 350 for about 20 minutes or until mushroom cap softens. Turn up heat or broil for last couple minutes to melt and lightly brown cheese. Serve immediately. Yummy!
NOTE: You can use any mushroom that will hold the stuffing. The addition of crab meat is excellent.
