Here is a twist on a traditional butternut squash recipe. Knox's Jamaican Jerk adds a touch of the islands to squash for a combination of aroma nd flavors that is sure to impress.
Ingredients:
1 Butternut Squash
1 Apple, diced
1/4 Red Bell Pepper, diced
2 Tablespoons Brown Sugar
2 Tablespoons Knox’s Jamaican Jerk Dry Rub
1 Tablespoon Butter, halved
Directions:
Preheat oven to 425 degrees
Cut squash in half lengthwise and spoon out seeds. Poke liberally with a fork.
Fill space where seeds were with apples and red bell pepper. Sprinkle with Knox’s Jamaican Jek Dry Rub and Brown Sugar and place butter on top of apples and pepper.
Place in baking dish and bake for 45 minutes or until squash is soft. Remove from oven when done and scoop out squash and apple mixture into a bowl. Ccarefully mix together before serving.
