Vegetables / Knox's Creamy Potato Salad Recipe
Ah! Potato salad. Like cole slaw there are so many things you can do to potato salad to make it your own. Below is one really good way to make a creamy potato salad and then a couple things to do to make it just a little better.
Knox's Creamy Potato Salad:
4 or 5 medium potatoes
2 stalks celery, stripped lengthwise and chopped into small cubes
1/4 red bell pepper, diced
Slice of medium onion, same condition
3/4 cup Mayonnaise
3/4 cup sour cream or plain yogurt
1 Tablespoon dijon mustard, yellow mustard will work
1 Tablespoon lemon juice
1/2 teaspoon salt
1/4 teaspoon pepper
Cut potatoes into bite size pieces. We typically cut them in half and then thirds or smaller. Boil potatoes with the 2 eggs until potatoes are just getting soft and the eggs are hard boiled about 10 minutes. You should be able to easily cut through the potato with a fork. You will know the eggs are done if you can spin them on the counter. Chill potatoes in cold water and place in a large bowl. add celery, red bell pepper and onion. Set aside.
When eggs are cool remove the shell and dice. Place eggs in a smaller bowl and mix together with the mayonnaise, sour cream, mustard, lemon juice, salt and pepper. Pour over potatoes and vegetables and toss until coated. Chill.
This potato salad recipe is a standard but you can dress it up however you like. Some ingredients to add to switch it up a little are Crumbled Bacon, Chopped Green Olives or Relish (strained). We have also added one sweet potato to this potato salad recipe (diced and boiled just like the other potato). Gave it great color.
